You Butter Believe It

I'm posting a link to this month's article by my friend Jill McLaughlin on the benefits...yes benefits of eating butter! You'll never eat that toast dry again!
"Good bread is the most fundamentally satisfying of all foods; and good bread with fresh butter, the greatest of feasts.” James Beard (1903-1985)

Keeping in mind that butter is a saturated fat, which is not good in excess, it's fine to use it in small amounts, just like many products that are "bad" for you. Moderation is key! Too much soy is bad. One glass of soy milk a day is fine. Too much buttermilk is fine, but buttermilk pancakes or a cream sauce once a month is fine. The only exception, really, is trans-fats, or partially hydrogenated oils, which is a pitfall of most margerines. Good link, thanks.

CJ, thanks for the comment, I agree. I think so many people miss out on foods they label as "bad" when really it's just about consuming within reason and making sure it's good, quality, organic or local where possible.
